Pro Baking Formulas & Tips
- The Math: The multiplier is determined by calculating the surface area of the new pan divided by the original pan. (e.g. Area of 9x13 = 117. Area of 8x8 = 64. Result = 1.8x).
- Never overflow: Regardless of instructions, never fill any cake or brownie pan more than 2/3 to 3/4 full, or it will spill over your oven rack.
- Mind the depth: Changing pan sizes changes the batter depth. Thinner layers bake faster, while deeper layers require longer baking times and often lower temperatures (e.g. drop 25°F) to avoid burning edges before the center sets.
