Tips for Choosing the Right Saucepan
- The Two-Thirds Rule: Never fill your saucepan to the brim, especially when boiling. Keep liquids below 2/3 capacity to prevent starchy water or hot soups from bubbling over.
- Consider the material: Stainless steel or fully clad pans are best for boiling and even heating. Nonstick is ideal for creamy or sticky sauces.
- Ergonomics matter: For 3+ quart saucepans, look for a "helper handle" on the opposite side. Thick soups and boiling water are heavy and hard to pour one-handed.
